- 50g baby spinach
- 1/3 cup blueberries
- 150g yogurt (preferably passionfruit)
- 2 frozen bananas (chopped)
- 200ml fresh orange juice (about 2 large oranges)
This smoothie brings together everything I want in a light breakfast. Bright citrusy orange juice to wake me up, yogurt for protein, bananas for starch and potassium, blueberries for the fruit vitamins, spinach for the vegetable fibre.
It’s a smoothie, so essentially there’s only one step: blitz everything together. However some prep is needed in the form of peeling, chunking and freezing the bananas the night before. This is necessary as the chunks mean they’re easier to throw in your blender and blend, though you could theoretically keep a rolling supply of frozen banana chunks in the freezer and then you could have smoothies whenever.
You’ll also need to juice two large oranges (one per person), which probably means getting the citrus juicer dirty. I add the pulp to my smoothie for fibre but prefer to juice first rather than peel the oranges and throw them in, because of seeds. However if you don’t have oranges or this extra step seems beyond you in the early morning, feel free to use about 200-250ml of orange juice from a carton or whatever. I also prefer to have a zingy yogurt, like passionfruit or lemon, but a plain yogurt works well too.
Add ingredients to blender in the order given and blend until smooth.
